My boys loved icing them and putting the lollies on to make it their own.
Two thumbs up to this recipe i recommend it to any one that wants to entertain kids and spend guilty time with them. We made gingerbread men in our ESOL class at school. They were so super delicious that we ate them in one day! Our mums and dads and brothers and sisters said they were yummy.

Recipe seems great so far, though I'm not sure why you had me pre-heat my oven when the dough still had 30 mins to sit in the fridge. I reckon point 1. Can be made point 3. They're best when they're crisp, so don't undercook or they are inclined to be a little soft.

I couldn't seem to roll it without loosing a ton on the floured baking paper. Ended up making another batch, but adding a lot more flour when rolling, which did the trick. This helps prevent the dough from getting too sticky.
However if all of the above is done they should be perfect. If you're still having trouble, perhaps leaving the dough in the fridge a bit longer and using a floured surface could help. At this stage it looked reasonably dough-like, but then I followed the instructions to roll out between baking paper and it was so sticky I had to bin the lot.

All our recipes are measured using metric cups and spoons. It is important to ensure that all ingredients are measured or weighed correctly. It maybe necessary to shake a little flour onto the baking paper before rolling out the dough after chilling. Super quick, easy and delicious, made with my 7 year old. I had to cool the dough for longer, which I think stopped them spreading out as much.

Bake the gingerbread for 8—10 minutes or until cooked and golden. Remove from the oven and cool on a wire rack. Make the icing by sifting icing sugar into a bowl. Mix in 3—4 tsp hot water to make a piping consistency.
